Grapefruit and Avocado Salad with a Mint Vinaigrette:
(Makes 4 servings. Recipe from here)
Salad:
2 ripe avocados
2 large red grapefruits
6 cups prepackaged spring mix salad
Vinaigrette:
1 tbsp fresh mint leaves, chopped
1 tbs extra virgin olive oil
2 tsp honey
2 limes, juiced
pinch of fine sea salt
pinch of freshly ground pepper
Peel the grapefruit, removing the white membrane. Cut between the inner membranes to remove the segments of the fruit and set aside. Peel and pit avocados; cut lengthwise into 1/2 inch thick slices. Divide salad mix between four plates; arrange an equal amount of grapefruit and avocado on each plate.For the vinaigrette: using a food processor, mix together lime juice, mint, honey, oil, salt and pepper. Spoon vinaigrette over fruit and salad and Serve.
