Homemade Garden Burgers:

Preheat your oven to 450 degrees.

In a food processor, combine these ingredients together until everything has been finely ground:

1 cup (cooked) brown rice
1 (15-oz) can chickpeas, drained and rinsed
1/3 cup whole-grain bread crumbs
1/3 cup sunflower seeds
1  roasted red pepper, peel off the skins (you can roast yourself or buy the Jared kind)
2 jalapeno pepper (seeded)
1/3 cup chopped carrots
1 shallot, chopped
3 large eggs
1 cup alfalfa sprouts
1/3 cup cilantro
zest of 1 lemon
1 tsp kosher salt
1/2 tsp pepper

Once the mixture has been ground, form patties (how ever big you want them) and place them about two inches apart from each other on a baking sheet lined with foil. Right before you place them in the oven switch your oven over to broil, and broil them on high for 8-10 minutes on each side (watch carefully, you don't want them to burn).

Serve on whole grain hamburger buns with honey mustard, light mayo, and arugula (or spinach).
