This cake is so good. The lemon glaze keeps the cake very moist. Great with a cup of coffee in the morning.
Lemon Yogurt Cake:
Preheat your oven to 350.
Mix together:
1 1/2 cup flour
2 tsp baking powder
1/2 tsp salt
sift together
Combine ingredients with:
1 cup yogurt (whole milk)
1 cup sugar
2 eggs
1/2 tsp vanilla extract
2 tsp lemon zest
Whisk together and add 1/2 cup vegetable oil. Mix well.
Grease and flour a deep baking dish (8x8). Pour the cake mixture into the baking dish and place in the over for 50 minutes.
Lemon Glaze:
In a sauce pan heat on low for ten minutes:
1/3 cup lemon juice
1/3 cup of sugar
Spoon the warm lemon and sugar over the cake, after it has been taken out of the oven and has cooled down (this mixture helps to keep the cake from drying out). Add finely chopped walnuts to the top of the cake and serve warm or at room temp.
