Chicken Salad Sandwich:
¾ cup lite mayo
3 sticks celery, finely chopped
½ grapes sliced in halves
½ cup finely chopped walnuts
1/2 small red onion, finely chopped
1 tbsp fresh chopped dill
kosher salt
pepper
½ cup romaine lettuce or butter lettuce (cut into small pieces)
6 oz of cooked pulled chicken breast or all natural canned chicken breast pieces (cut up into small pieces)
Mix ingredients together and serve alone or in toasted sourdough/whole grain bread as a sandwich.
