This is a great recipe for someone who is hosting a brunch and feels like serving something a little different than the traditional brunch menu.

When you are hosting any kind of gathering you want to have everything prepared ahead of time. I would start preparing the breakfast bar about an hour and a half before your guests arrive.

Breakfast Burrito Bar:

First preheat your oven to 170 (for keeping your eggs and hash browns warm). Set out 8 small serving bowls for the fillings.

You will need:

1 package of large flour tortillas (you can use corn or whole wheat, but the flour ones hold together better)
10 eggs (or more, depending on how many people are coming. 1-2 eggs per person)
1 package of southern style hash browns (the small cubed hash browns with the red and green peppers and onions)
1 package of bacon
light sour cream
1 can of refried beans
1 package of shredded cheddar cheese (or mozzarella)

Options for fillings:
chopped red tomatoes
chopped lettuce
chopped chives or scallions
chopped avocados
chopped cucumber
chopped zucchini (yellow or green)

Options for condiments:
hot sauce
ketchup
spicy ranch dressing sauce (mix 1 cup of ranch dressing with 2-3 tbsp of green chili sauce and 1 tbsp lime juice, salt and pepper. use instead of sour creme)

Start by cooking your bacon. Once its done chop them up and put them into a small serving bowl and set aside. Then start putting together your burrito bar fillings: chop up your tomatoes, lettuce, chives, and avocados, etc, and put them all in their own (separate) small bowls. Wrap each bowl with plastic and place in the refrigerator until ready to serve. Then put your sour creme, refried beans, and other condiments into their own small serving bowl (or container) and set aside. Also set aside a bowl of the shredded cheese.

Now start cooking your hash browns in a tbsp of vegetable oil (or canola oil). When they are done, pour them into a medium size Pyrex serving bowl and place them into the preheated oven to keep warm until you are ready to serve. Now scramble your eggs, this will be your main filling (just as chicken or beef would be in a regular burrito) you can add any kind of seasoning you want to the eggs. I just use salt and pepper. Spoon them into a medium size Pyrex serving bowl and place them into the oven to keep warm. Last is the tortillas, you can either brown them in a frying pan with a little bit of butter or oil or just warm them in the microwave and cover them until they are ready to use.

Once your guests have arrived set out your fillings and plates and let them make their own breakfast burrito.
