These are delicious!
Cranberry, Granola, Chocolate Nut Bars:
Toast 1/3 cup pumpkin seeds and 1/4 cup sunflower seeds in the oven on 400. Toast until lightly browned.
Heat these ingredients on a low heat in a sauce pan:
3/4 cup unsweetened cranberry juice
2/3 cup maple syrup
1/2 cup brown sugar
2 tsp cinnamon
In a large bowl add the toasted seeds, 1/4 cup sliced and chopped almonds, 1/4 cup chopped pistachios, 2 cups of oats (add more if too runny), and a pinch of salt. Once the sauce has thickened add it to the nut mixture and mix well. Spray or grease a baking sheet and spread the mixture evenly on to the baking sheet right away.
Bake on 325 for 30 minutes.
While they are baking put one cup of semi-sweet chocolate chips into a double boiler (Pyrex glass bowl over a small pot of boiling water on medium heat) with 2 tsp of Crisco. Mix together until smooth consistency. When the nut bars are done take them out of the oven and let them cool down before lightly spooning strips of chocolate over the bars. You can use white chocolate chips too. Cut into individual sizes serve warm or at room temp.
