Strawberry & Feta Spinach Salad:

Dressing:
1 cup fresh sliced strawberries
2½ tbsp. apple cider vinegar
1½ tbsp of your favorite champagne (drink the rest at dinner)
1 tbsp sugar
1/4 tsp table salt
blend together in a food processor or blender
refrigerate until cold

Salad:
baby spinach leaves
sliced kalamata olives
sliced almonds
sliced fresh strawberries
crumbled feta cheese

Serve baby spinach leaves as a side salad or by itself. Add sliced almonds, strawberries, kalamata olives and crumbled feta cheese on top. Lightly drizzle the dressing over the salad and serve.
