Turkey & Provolone Panini with Cilantro Cream Sauce:
sourdough bread, sliced 1/2 inch thick
olive oil
sliced red tomatoes
butter spread
honey roasted turkey, deli slices
slices of provolone cheese
Dijon mustard
pepper
salt
cilantro cream sauce
Cilantro Cream Sauce:
In a food processor blend:
1 cup ranch dressing
1/2 cup sour creme
1/2 cup of fresh cilantro
1 small can of diced green chilis (6 ounces)
1/2 tsp kosher salt
1/2 tsp pepper
zest of 1 lime
2-3 tbsp of lime juice
Turn on your panini maker to a medium heat. Lightly butter the insides of two slices of bread and layer on your fillings. Turkey, tomatoes, provolone, Dijon mustard, and a pinch of salt and pepper. Then lightly spread your cilantro cream sauce on one on the inner sides and close sandwich. Lightly brush olive oil on the outsides of the sandwich and grill until golden brown (or the cheese has melted).
Save what is left of the cilantro cream sauce in the refrigerator. Makes a very good dip for chips as well.
