Ben built me a cute little herb garden this spring. So I went out and bought some fresh herbs to plant in it. Out of all of the herbs I probably use dill the most frequently. When I first brought it home I couldn't think of what I could use it for..but Ben asked me to make him an egg salad sandwich one day so I thought that might be a good addition to the sandwich. It's pretty good. Dill tastes really good with most vegetables especially in potato salad. Here is my version of an egg salad sandwich...
Egg salad Sandwich:
Mix together in a large bowl
5 chopped hard boiled eggs
2 1/2 tbsp light mayo
1 tbsp Dijon mustard
1 tbsp regular mustard
salt
pepper
fresh chopped dill
2 finely chopped dill pickles
1 tsp paprika
Toast two slices of Wheat cracked Sourdough bread first in a saute pan. Brush olive oil on both of the outer sides (lightly) and a very small amount of butter on the inner sides. Put some romaine lettuce on one inner side and the mixture on the other side and close the sandwich.
