Crab Salad:
1 cup crab meat (you can find cooked crab meat in a container in the seafood section of your grocery store)
1 cup halved cherry tomatoes
1 cup cubed avocados
1 cup fresh mozzarella balls, halved
1 cup chopped hard boiled eggs
1 cup cucumber, peeled, seeded, cubed
1/2 cup shredded Parmesan cheese or Pecorino cheese
salt
pepper
1 cup homemade croutons (you can find how to make these at the bottom of my very first post in the cucumber salad recipe)
1/2 medium serving bowl full of Romain lettuce, chopped
Put all of your ingredients ontop of the bed of lettuce and mix together. Pour some of the lemon vinaigrette dressing over the top.
Lemon vinaigrette dressing:
1 tbsp melted butter
2 tbsp lemon
1 tsp lemon zest
1 tsp salt
1/2 tsp pepper
2 tbsp white wine vinegar
3 tbsp extra virgin olive oil
Mix dressing together, pour over your salad and serve.
