3 avocados - peeled, pitted, and mashed (try to find ones that are blemish free and have a slight softness to them)
zest and the juice of 1 lime
1 tsp kosher salt
1 garlic clove, minced
1/2 cup yellow onion, diced finely
4 tbsp chopped fresh cilantro
2 big red tomatoes, diced
1 jalapeno pepper, seeded and diced
1 pinch of cayenne pepper
1 pinch of cumin
Start making this about 1 hour before you are going to serve. In a medium mixing bowl, mash together the avocados, lime juice, garlic and seasonings (salt, cayenne pepper, cumin). Mix in onion, jalapenos, cilantro, tomatoes. Zest the lime over the guacamole and refrigerate for 1 hour (or serve immediately).
