Lemon Glazed Bacon wrapped Scallops:
 
2 lb fresh medium sized sea scallops
1 lb sliced bacon (halfway cooked)
1/3 cup fresh lemon juice
zest of one lemon
4lb melted butter
minced garlic (or use garlic instead the salt and minced garlic)
salt
pepper
cayenne pepper
 
Since the sea scallops won't take that long to cook in the oven start by cooking your bacon in a frying pan. Take the pieces out when they are about halfway done and place them on to paper towels. Mix the salt, pepper, and cayenne pepper together in large mixing bowl. Add the melted butter, lemon zest, and lemon juice to the seasoning and mix. Then add the sea scallops (mix them around so they are evenly coated. Cut the bacon in half crosswise and wrap each scallop in a piece of bacon, securing with a wooden toothpick. Sprinkle some lemon zest over the top of each piece and place them on a rack in a broiler pan (baking sheet lined with foil. Broil 6 inches from heat 10 to 15 minutes or until scallops are opaque and bacon is done, turning occasionally. Serve immediately.
