This soup is so delicious. It was the very first meal I served in our new home back in November. It was really cold that week we moved in and I remember it had just snowed and we were going to have my husbands family over for dinner. I kept thinking to myself, "what can I make for a group that is warm and hardy?...soup!" So, I took a basic vegetable soup recipe and kicked it up a bit. Enjoy!

Vegetable-Beef and Noodle Soup Recipe:

1 yellow onion cubed
1/2 tablespoon of olive oil
1 tablespoon of butter
5 chopped sage leaves
1 teaspoon salt, pepper, and Italian seasoning (or you can add dried
oregano, basil, garlic powder)
6 celery sticks sliced
4 carrots sliced
1 package of cubed beef (small pieces)
1 carton of beef broth
3-4 beef bouillon cubes
1/2 bag of frozen corn
1/2 bag of frozen green beans
1-1/2 bag of coleslaw mix (or sliced cabbage)
4 big golden potatoes
1 big can of tomato sauce
1 big can of Italian stewed diced tomatoes
4 cups of water
1 package of whole wheat macaroni noodles
Shredded Parmesan Cheese

Thirty minute prep time: Prepare all of the ingredients before you start to
cook just to be safe. (Always cook everything on a medium heat)

Saute cubed onions and butter in a pan for three to four minutes then add
sliced celery. Cook until they are softened (about 10 minutes). In a large
dutch oven, brown the meat with a 1/2 tablespon-1 tablespoon of olive oil.
Once the meat is fully cooked/browned, add the celery and onion mixture. Add
all of your dried ingredients, chopped sage leaves, bouillon cubes and mix
together. Add the tomato sauce and mix well, then add the beef broth and the
4 cups of water. Add the carrots, corn and green beans, diced tomatoes, and
cubed potatoes. Mix together and keep on a medium heat for about thirty to
forty-five minutes. Once the potatoes have softened turn the temp down and
simmer for another 10 to 15 minutes. During this time cook the maccoroni
noodles in a separate pot. The soup should only take about 1-1 and a
1/2 hours to cook. Once the soup is ready either add the noodles to the
soup mixture or add to individual bowls. Sprinkle shredded parmesa cheese on top for taste.
