Cilantro, Lime, Mango Salsa, Chicken & Cheese Quesadilla:
large flour tortillas, browned (heat 1 tbsp of butter in a large skillet and brown each side. then set aside to cool)
shredded chicken
shredded mozzarella cheese
mango salsa
cilantro, chopped
1 small can of chopped green chilies
ranch dressing
lime juice
lime zest
salt
Preheat your oven to 425 degrees. Grease (or spray) a baking sheet.
1 Quesadilla:
In a bowl mix 2 tbsp of chopped cilantro, 1 tbsp chopped green chilies, 1 tsp lime juice, 1 tsp lime zest, 3 tbsp mango salsa, and a pinch of salt. Lay 1 tortilla on the baking sheet. Lightly spread a thin layer of ranch dressing on the tortilla. Then spread the cilantro and salsa mixture out on to the tortilla. Sprinkle a layer of the shredded chicken. Then top with the shredded cheese. Place another tortilla over the top to close. Place the baking sheet in the oven for about 5 minutes (or until the cheese has melted). Remove from the oven. Once the quesadilla has cooled cut into 8 pieces (using a pizza cutter) and neatly arrange them on a platter. Repeat these steps to make more for your platter.
