Homemade Puff Pastry Dough:

1 3/4 cup flour
1/4 cup cold unsalted butter, cubed
1/2 cup water

Using a kitchenaid mixer with a flat beater, combine the cold butter with the flour until the mixture resembles little crumbles (1-2 minutes). Add the water while the mixer is on low, one tablespoon at a time. Mix until it forms a dough. Remove from the bowl and knead into a ball. Wrap with plastic wrap and freeze until ready to use.
