Roasted Elephant Garlic Spread:
1 lb garlic head
1/2 cup olive oil
kosher salt
pepper
Preheat your oen to 375 degrees.
Remove any loose skin from the outside of the garlic head. Cut off the top (1/3 of the head to open up the garlic). Place the head open side up in a deep baking dish. Drizzle with olive oil and sprinkle with salt and pepper. Cover the dish tightly with foil and bake for 1 hour and 30 minutes (or until the cloves begin to pop out of their skins and brown. Once you have removed the garlic from the oven and it has cooled down, squeeze the cloves out of their skins into a small serving bowl. Add the oil from the baking dish and mix well to form a paste. Serve with warm french bread and a spreading knife.
