Zucchini Fries, Baked:

4 zucchini, cut into stripes (the size of a french fry)
3 egg whites, beaten
1/2 cup flour
1 cup panko bread crumbs
1/2 cup grated Parmesan cheese
1 tsp dried Italian seasoning
1 tsp garlic powder
1/2 tsp pepper
1/2 tsp salt

Preheat your oven to 425 degrees.

Spray a baking sheet with cooking spray and set aside. In a small bowl, beat the egg whites with a fork until they become frothy.

Mix the pepper and salt in with the flour and pour onto a plate.

Mix together the panko bread crumbs, Italian seasoning, garlic powder and Parmesan cheese on a plate.

Dust the zucchini with the flour, then dip the sticks in to the egg whites and then into the bread crumb mixture. Make sure all sides get coated well. Place the sticks on the prepared baking sheet. Bake half of the zucchini fries at a time. Try not to crowd them (if you put them too close together they will not bake properly).

Bake at 425° for about 1-15 minutes or until golden brown and a little crispy. Turn the fries half way through. Serve warm with lite ranch dressing or your favorite marinara sauce.
