Mini Key Lime Tarts:

8 Mini Keebler Pie Crusts (2 packages) - Graham Ready Tarts (Safeway carries these in a package of 6)
1 (14 oz) can of sweetened condensed milk
5 large egg yolks (poured through a seive)
1/2 cup of Key Lime Juice
1 tbsp sugar
zest of 2 limes, divided
fat free whipped Cream for topping
halved lime slices

Preheat your oven to 375 degress.


Whisk together key lime juice and sweetened condensed milk until smooth. Next add the egg yolks, lime zest, and sugar and whisk until smooth. Pour into pie shells. Bake for 15 minutes. Remove from the oven and let them cool on the counter, then refrigerate for at least 3 hours before serving. Top with fresh whipped cream, lime slices (halved), and sprinkle lime zest.

You can also use this Lemon Curd recipe to create Lemon Tarts with these ready to go pie crusts. Just add lemon slices and lemon zest to the lemon curd tarts instead of lime.
