Chocolate Banana Mousse with Chopped Walnuts:
1 oz unsweetened chocolate
1 cup evaporated skim milk
3 tbsp sugar
2 egg yolks
1/4 tsp salt
1 tsp vanilla extract
2 bananas, sliced
1/2 cup chopped walnuts
Combine chocolate, 1/4 cup of the milk and the sugar
in the top of double boiler (or in a Pyrex bowl over a small pot of boiling water on medium heat).

Cook and stir until chocolate melts. Add the egg yolks to a mixing bowl.
Pour half of the hot chocolate mixture over egg yolks and beat well. Pour egg mixture into the remaining chocolate mixture on top of double boiler and stir. Add in the salt and stir until the mixture thickens. Then remove from the stove and cool completely.

Pour cold milk into mixing bowl and beat until very stiff. Fold chocolate mixture into stiffly beaten milk. Fold in vanilla and 1 banana that has been sliced. Spoon into mold, freezer tray or individual cups and freeze until firm. Serve cold and sprinkle the chopped walnuts over the top.
