Tomato, Mozzarella and Basil Pesto Sandwiches on Rosemary Ciabatta Bread:
rosemary ciabatta bread (Safeway carries this or you can also use rosemary flat bread for this)
fresh mozzarella, sliced thin
fresh basil leaves
basil pesto
turkey bacon
thin slices of prosciutto
Slice the ciabatta loaf down the center (horizontally). Spread a thin layer of the basil pesto on the insides of each piece. Layer the slices of prosciutto on the bottom half of the bread (covering the entire piece). Then layer on the basil leaves, tomatoes, and mozzarella cheese. Place the bottom piece on a baking sheet and place in the oven. Broil on high for 2-5 minutes or until the cheese melts. Remove from the oven and place the other half of the bread on the top to close the sandwich. Slice the sandwich (vertically) at an angle, into 3 inch slices to make small sandwiches. Arrange them on a serving platter and serve warm.
